Pin it, did it: 4-ingredient Peanut butter chocolate cookies

Hi Frenchies,
As you may know now, i am a HUGE fan of Pinterest. And my bords on Pinterest are full with ideas I want to try.
So I thought it should be time to do so, right? I want to share with you the result of my experiments.
Today, I choose to start with the 4-ingredient Peanut butter chocolate cookies.

First the 4 ingredients:

Just 4 simple ingredients

– 1 egg
– Sugar
– chocolate nibs
– Peanut Butter

 

 

 

 

 

 

 

 

After some mixing and kneeding in little balls, it’s ready to go in the oven!

And after a few minutes, (4 and a half more than the original receipt mentioned) I took the first bite 🙂

Final judgement:
Great recipe, easy to follow and well explained. And the cookies are delicious!!!

Where I find my Weight Watcher inspiration

When I started my Weight Watcher journey I went online to get some inspiration on what to cook.
As I am very visual I turned to Pinterest. From there I came accross a lot of ladies blogging about their journey with weight loss.
Here are my favorites ladies:
  • brookenotonadiet.com : Brooke is an extraodinay woman who has accomplish such a weight loss and therefore very inspiring. She lets me see that when you want something you can accomplish the greatest things.
  • floordeboor.wordpress.com : Floor is from Holland (like me) and she has also a very strong mindset. She is a star in mealprep (her blog is in English)
  • fattywantsabiscuit.wordpress.com : Laura is a young British woman who shows that weight loss is possible at any age.
  • livandcook.fr : Olivia is a young French girl who has succeed thanks to Weight Watchers to find some balance in her eating. Her successes gave her the courage to start a blog with healthy recipes. (It’s in French)
Because I’m such a visual person I follow them on Instagram also. They seems also to be able to make super nice pictures!

Baked Oatmeal muffin

6 propoints- breakfast

 

The original recipe is about banana baked oatmeal for 4 serving. I have tried that recipe and I liked it so much I wanted to try it in muffin tin. This way I could make 6 servings instead of 4.
Ingredients
2 cups of oats
1 tbs baking powder
2 cups rolled oats
1 tsp baking powder
1/4 tsp kosher salt
1 egg, beat
1 mashed banana
1.5 cups skim milk
1 tsp vanilla

Best stuffed porc recipe ever! Review

 

 

 

 

 

Hi Frenchies,
Today a Weight Watchers proof recipe review. I often go Pinterest to look for recipe. And ,oh big surprise, I found this recipe there! It’s from Skinny Taste actually, you can find a whole lot of Weight Watchers proof recipes there.
As a big cheese eater, I was attracted to this recipe because it mentionned brie!! the pear/prosciutto/brie combo seemed to be a combo from heaven.
The recipe mentions chicken breast but I didn’t have some in my fridge so I used porc, which I think is a good alternative.
I served it with Brussels sprouts and basmatit rice. The hubby also enjoyed this dish which makes it easy to eat healthy.

Weight Watchers & me

In March 2014 I have started to eat according Weight Watchers.
I’ve always been a “dieter”, so far as I can remenber I always felt to be too fat. I remember wanting to eat only tomatoes during the summer of my 11th birthday because i tought I was too fat. Ever since I’ve tried all kind of diet: stop eating, eating less, sonja bakker (very popular in Holland), South beach, eat one spoon olive oil before each meal (yak!)…only a few to name. It has also cost me a lot of money ( supplement foods/pils but also new clothes). At age of 32 I ended beeing overweight with a bmi of 31,2….That’s when I started to think about Weight Watchers, as a last attempt to a healthy lifestyle and weight loss.
In october 2012 I got pregnant so there was no way I was going to enter a diet, but I also did not want to get to “huge” due to the pregnancy. By the end of it I had gained 17 kg ( not too bad right?)

I have given birth to a beautiful baby boy on July 29th 2013. A few weeks later, I had a closer look to myself at the hairdresser. Here I was, a young mother of 4 weeks, sitting in the hairdresser chair with a big giggly stomach! I also began to feel some pain at my feet when i stood up. At that point I still had 10 kg above my pre-pregnancy weight, which left me with a bmi of 33,9!! OMG!!!
It still took me half a year to dare start with Weight Watchers. We had a rockin’ start with the begining of our family, it took us a while to adapt and for me to make space for changes.
But on March 3rd I went to my first meeting.
Now, almost 10 months on the way I have lost 10 kg. It could have been more (of course, it always can but life happens). Nevertheless I’m still proud of it: back to my pre-pregnancy weight.
I’m entering fase 2: down sizing to a healthy weight for my height (I’m quit little) within a year from now. And of course I want to do this with Weight Watchers, because it’s not a diet but a lifestyle (I’ve heard this everywhere but it’s true). WW learns me to be aware of what I eat and gives me the possibility to choose.
So this is my goal:

Even non dieter liked it!

We had some visit this weekend. H and I had some plans for saturday evening so our niece came to baby sit our baby boy and she spent the rest of the weekend with us! Always fun!

 

Even on weekend my journey with Weight Watchers still goes on and I like to try new recipes that every body likes.

I always find it exciting as i’m a bit afraid people won’t like what i cook.

On the menu this saturday:

– Cannelloni’s with Chicken and mozzarella (6ppts)

– Speculoos cream desert (4ppts)

I found both recipe on Pinterest, I have changed the quantity as we were only the 3 of us.

First the cannelonni’s:

For 6 people

2 onions
1 teaspoon olive oil
1 kg of tomatoes
1 clove garlic
2 of formwork baslic
9 lasagne sheets
3 chicken breasts (250g)
oregano
1 ball of mozzarella (125 gr)
2 small eggs
18 slices bacon
30g grated parmesan
Salt and pepper
Preheat oven to 200 ° C.
Fry the chopped onions in a tablespoon of olive oil and add the diced tomatoes, the garlic and the basil leaves. Let it stew gently at least 20 minutes then remove the basil.

Cook the noodles for 5 minutes (several times) in a large pot of salted water, then place them on a clean cloth and cut them in half (to get 2 squares) after being allowed to cool a bit.

In a pan with baking sheetbrown the chicken,  sprinkle with salt and pepper, oregano and sauté about 15 minutes. Chop the chicken  and mixwith mozzarella. Add the eggs. Mix again.

Place a slice of bacon on each square of lasagna, cover it with a small amount of stuffing and roll each square into a cannelloni. Pour half of the tomato sauce in a dish, arrange the cannelloni and pour the remaining sauce over it. Sprinkle with grated parmesan and oregano and put in the oven for 25 minutes.

 

And this is what you get!

And then desert!

For 4 people:

– 60 g of white or dark chocolate or milk
– 30 cl of skim milk
– 2 teaspoons cornstarch
– 6 spéculoos (42 gr)
– 1 sachet of vanilla sugar
Cut the chocolate into 1-square, put them in a bowl with 10 ounces of milk, heat  for 1 minute in a microwave oven (800 W)
In a bowl, dissolve the cornstarch with the remaining cold milk, add the hot chocolate milk and mix.
Grind finely spiced, incorporate and vanilla sugar. Pour into a small saucepan with a thick bottom, let thicken over low heat 10 minutes, stirring constantly with a spatula.
Spoon the chocolate cream into 4 mugs glass with a capacity of 10 cl.

Place them for (at least) 1 hour in the fridge.

First birthday celebration within my Weight Watchers new lifestyle

Hi there!

It was my birthday some day at the begining of June and as every year I wanted to celebrate with my loved ones 🙂

Since I have joined Weight Watchers earlier this year I wanted to find recipes which fits in my new life style. I have to say I was (and still am) quite proud of the results 🙂

Every one enjoyed the appetizers (and of course I had given way much more things to eat but others stuf were not Weight Watchers proof).
